Sol y Sombra, the property's onsite restaurant, celebrates the valley's agricultural roots with Spanish-inspired dishes featuring local citrus, dates, and chilies. Multiple versions of paella, from traditional to vegetarian, are made to be shared. By the pool, Poolside at the Paloma serves up fresh-fruit cocktails and herb-infused mocktails, while the gold-flecked Paloma Oro adds a touch of desert glamour. And don't forget to order some tapas-style snacks from the Bar Menu.
